Cooking Instructions

  1. 1

    Prepare the Glaze

In a saucepan, combine maple syrup, bourbon, soy sauce, minced garlic, and black pepper. Bring to a simmer over medium heat and reduce by half, about 10 minutes. Set aside.

  2. 2

    Cook the Farro

In a medium pot, bring water or broth to a boil. Add farro, reduce heat to low, cover, and simmer for 25-30 minutes until tender. Drain any excess liquid and set aside.

  3. 3

    Prepare the Brussels Sprout Salad

Shave the brussels sprouts thinly and toss them in a bowl with a drizzle of olive oil, salt, and pepper. Add in dried cranberries and candied walnuts.

  4. 4

    Grill the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper. Grill for 4-5 minutes per side, basting with the maple bourbon glaze during the last few minutes of cooking.

  5. 5

    Plate and Serve

Serve the grilled salmon over a bed of farro, topped with additional maple bourbon glaze. Add the shaved brussels sprout salad on the side.
