    Prepare the Ingredients

    Slice the chicken breast into thin fillets. Clean and slice the mushrooms. Finely chop the onion.

    Caramelize the Onions

    In a skillet over medium heat, add a tablespoon of olive oil and the chopped onions. Cook slowly until the onions are golden brown, about 15 minutes.

    Cook the Chicken

    In another skillet, heat a little olive oil over medium-high heat. Season the chicken fillets with salt and pepper, then add to the skillet. Cook for about 5-6 minutes on each side, until cooked through.

    Sauté the Mushrooms

    In the same skillet used for the chicken, add the sliced mushrooms and sauté for about 5 minutes until they are tender and slightly browned.

    Assemble the Dish

    On each plate, place the chicken fillet, top with the sautéed mushrooms, caramelized onions, and sprinkle with grated fontina cheese. Optionally, melt the cheese under a broiler for a couple of minutes.

    Serve warm with garlic aioli on the side.
