    Prepare the Artichokes

    Trim the stems of the artichokes and remove the tough outer leaves. Cut the artichokes in half and scoop out the furry choke with a spoon. Rub with lemon juice to prevent browning.

    Season and Oil

    In a bowl, mix olive oil, salt, and black pepper. Brush the cut sides of the artichokes with the olive oil mixture.

    Grill the Artichokes

    Preheat a grill to medium-high heat. Place the artichokes cut side down on the grill and cook for about 10-15 minutes, until charred and tender.

    Make the Lemon Aioli

    In a bowl, whisk together the egg yolk, minced garlic, lemon juice, and a pinch of salt. Gradually add olive oil while whisking until emulsified. Adjust seasoning with salt and pepper.

    Serve

    Remove the grilled artichokes from the grill and drizzle with lemon aioli. Sprinkle with chopped chives and serve warm.
