    Prepare the Bison Patties

    In a bowl, combine the ground bison, salt, and black pepper. Mix gently until just combined, then form into 4 equal patties.

    Cook the Patties

    Heat the olive oil in a skillet over medium-high heat. Add the bison patties and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.

    Add Cheese

    In the last minute of cooking, place a slice of fontina cheese on each patty and cover the skillet to melt the cheese.

    Toast the Buns

    While the cheese is melting, toast the burger buns in a separate skillet or under a broiler until golden brown.

    Assemble the Burgers

    Spread garlic aioli on the bottom half of each toasted bun. Place the cooked bison patty with melted fontina on top, followed by a generous handful of arugula and a spoonful of pickled onion. Top with the other half of the bun.

    Serve immediately with your favorite side dishes.
