Preparation

    Make the Bacon Jam

    In a large skillet over medium heat, cook the bacon until crispy. Remove and finely chop, reserving some bacon fat in the pan.

    Sauté the Onion

    In the same skillet, add the chopped onion and sauté until translucent, about 5 minutes.

    Combine Ingredients

    Add the cooked bacon, brown sugar, apple cider vinegar, thyme, salt, and pepper to the skillet. Stir to combine.

    Simmer the Jam

    Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally, until thickened.

    Prepare the Bread

    While the jam is simmering, preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch slices and place on a baking sheet.

    Toast the Bread

    Drizzle the sliced bread with olive oil and toast in the oven for about 5-7 minutes or until golden brown.

    Assemble

    To serve, place slices of brie on the toasted points and top with a generous spoonful of bacon jam.
