Method

Preparation of Octopus

    Cook the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and simmer for about 45 minutes or until tender. Let it cool, then cut into tentacles.

    Marinate

    In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Add the octopus and marinate for at least 30 minutes.

Making Green Olive Pesto

    Blend Ingredients

    In a food processor, combine green olives, basil leaves, pine nuts, parmesan cheese, olive oil, lemon zest, and salt. Blend until smooth. Adjust seasoning to taste.

Cooking Potato & Guanciale

    Cook Potatoes

    In a pan, heat olive oil over medium heat. Add cubed potatoes and cook until golden and tender, about 15-20 minutes.

    Add Guanciale

    Add diced guanciale to the pan with potatoes and cook until crispy. Season with salt and black pepper to taste.

Grilling Octopus

    Preheat a grill to medium-high heat. Grill the marinated octopus for about 3-4 minutes per side until charred and heated through.

Plating
