Cook the Pasta
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.

Add ‘Nduja
Add the ‘nduja sausage to the skillet, breaking it apart with a wooden spoon, and cook for about 2-3 minutes until it starts to brown.

Incorporate Tomatoes
Pour in the canned tomatoes, crushing them with the back of a spoon. Add salt and simmer for about 15 minutes, stirring occasionally.

Combine Pasta and Sauce
Add the cooked pappardelle to the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Stir in the fresh basil leaves, mixing well. Taste and adjust seasoning with salt and freshly ground black pepper.
