Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare the Lamb

In a bowl, mix together Dijon mustard, chopped rosemary, chopped thyme, minced garlic, olive oil, salt, and black pepper to create a marinade.

Coat the Lamb

Rub the marinade all over the rack of lamb, ensuring it is evenly coated.

Add Breadcrumbs

Press breadcrumbs onto the lamb to form a crust.

Roast the Lamb

Place the lamb on a roasting rack in a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until desired doneness.

Rest and Serve

Remove the lamb from the oven and let it rest for 10 minutes before slicing and serving.
