Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the onion, celery, and green bell pepper. Sauté until the vegetables are softened, about 5-7 minutes.

Add Garlic and Turtle Meat

Stir in the minced garlic and diced turtle meat. Cook for an additional 5 minutes, stirring occasionally.

Combine Ingredients

Add the diced tomatoes, chicken broth, Worcestershire sauce, bay leaves, and thyme to the pot. Bring to a boil.

Simmer the Soup

Reduce heat to low and let the soup simmer for about 1 hour, stirring occasionally. Season with salt, black pepper, and cayenne pepper to taste.

Serve and Garnish

Remove bay leaves before serving. Ladle the soup into bowls and garnish with chopped green onions and hard-boiled eggs.
