Prepare the Chicken

Season the chicken thighs with salt, black pepper, and Cajun seasoning. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes. Remove and set aside.

Cook the Sausage

In the same pot, add the remaining tablespoon of olive oil and the sliced andouille sausage. Cook until browned, about 3-5 minutes.

Sauté the Vegetables

Add the chopped onion, green bell pepper, celery, and minced garlic to the pot. Sauté until the vegetables are softened, about 5-7 minutes.

Combine Ingredients

Stir in the diced tomatoes, chicken broth, okra, bay leaves, and the browned chicken thighs. Bring to a boil, then reduce the heat and let it simmer uncovered for about 30-40 minutes.

Final Seasoning

Taste the gumbo and adjust seasoning with salt, black pepper, and additional Cajun seasoning if desired. Remove bay leaves before serving.

Serve

Serve the gumbo over cooked rice and garnish with chopped green onions.
