Cheesecake Preparation

Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbly. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and then set aside to cool.

Make the cheesecake filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and beat until well combined. Add the vanilla bean extract, sour cream, and flour, and mix until smooth. Add the eggs, one at a time, mixing well after each addition.

Bake the cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and chill

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

Before serving, top the cheesecake with fresh berries and a dusting of powdered sugar. Slice and enjoy!
