Prepare the Flax Egg

In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.

Cook the Quinoa and Ancient Grains

Rinse quinoa and ancient grains under cold water. In a saucepan, combine quinoa and ancient grains with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it cool.

Mix Burger Ingredients

In a large mixing bowl, combine cooked quinoa, ancient grains, black beans, chopped onion, minced garlic, grated carrot, soaked flax egg, cumin, salt, and black pepper. Mix well until all ingredients are combined.

Form Patties

Divide the mixture into 4 equal portions and form each portion into a patty.

Cook the Patties

In a large skillet, heat olive oil over medium heat. Cook each patty for about 5-6 minutes on each side, until golden brown and heated through.

Assemble the Burger

On each lettuce leaf, place a burger patty, top with fresh salsa and avocado slices. Add more lettuce if desired.

Serve with Broccoli

Serve the vegan burger with a side of steamed broccoli.
