Fried Jalapeño Coins

1. Prepare Jalapeños

Slice the jalapeños into thin coins, removing seeds if desired for less heat.

2. Breading Process

Set up a breading station with flour, buttermilk, and cornmeal mixed with salt. Dip each jalapeño slice in flour, then buttermilk, then cornmeal.

3. Frying

Heat vegetable oil in a deep pan over medium heat. Fry jalapeño coins until golden brown, about 2-3 minutes on each side. Drain on paper towels.

House-Made Salsa

4. Chop Ingredients

Finely chop tomatoes, red onion, and cilantro.

5. Mix Salsa

In a bowl, combine chopped ingredients, lime juice, and salt. Mix well and set aside.

Chipotle Aioli

6. Combine Ingredients

In a small bowl, mix mayonnaise, chipotle peppers, and lime juice until well combined.

Assembly

7. Assemble the Sandwich

On the bottom half of the burger bun, layer lettuce, grilled chicken (if using), fried jalapeño coins, Pepper-Jack cheese, and a generous spoonful of house-made salsa. Drizzle with chipotle aioli and top with the other half of the bun.
