Veggie Patty Preparation
1. Cook Quinoa and Ancient Grains
In a saucepan, combine the quinoa and ancient grains with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until water is absorbed. Remove from heat and let cool.
2. Sauté Vegetables
In a skillet, heat a tablespoon of olive oil over medium heat. Add the onion, bell pepper, and garlic. Sauté until softened, about 5-7 minutes.
3. Mix Ingredients
In a large bowl, combine cooked quinoa, ancient grains, mashed black beans, sautéed vegetables, egg, breadcrumbs, salt, pepper, cumin, and coriander. Mix until well combined.
4. Form Patties
Divide the mixture into 4 equal portions and shape each into a patty.
5. Cook Patties
Heat a non-stick skillet or grill over medium heat. Cook each patty for about 4-5 minutes on each side until golden brown.
