    Prepare the Caramelized Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook for 20-25 minutes, stirring occasionally, until onions are golden and caramelized.

    Grill the Poblanos

    While the onions are caramelizing, roast the poblano peppers over an open flame or grill until charred. Place them in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel, seed, and chop the peppers.

    Cook the Chorizo

    In a separate pan, cook the chorizo over medium heat until browned and cooked through. Drain excess fat if necessary.

    Prepare the Queso Fundido

    In a saucepan, combine the cooked chorizo, grilled poblanos, and queso blend. Heat over medium heat until the cheese is melted and bubbly, stirring occasionally.

    Assemble the Lava Queso

    In a serving dish, layer the chipotle aioli, caramelized onions, grilled poblanos, and chopped tomato. Pour the queso fundido on top.
