Preparation Steps
Prepare Chicken
Preheat the oven to 400°F (200°C). In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, salt, and black pepper. In another bowl, beat the eggs.
Coat Chicken
Dip each chicken breast first in the egg, then coat with the Parmesan-breadcrumb mixture. Place the coated chicken breasts on a baking sheet lined with parchment paper.
Bake Chicken
Drizzle olive oil over the chicken and bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
Make Lemon-Herb Sauce
In a small bowl, whisk together the fresh lemon juice, chopped basil, minced garlic, olive oil, salt, and black pepper.
Serve
Once the chicken is done, remove it from the oven and drizzle the lemon-herb sauce over the top. Garnish with diced tomatoes and whole basil leaves. Serve with your choice of two sides.
