In a bowl, whisk together lemon juice, olive oil, minced garlic, salt, and black pepper. Add the Mahi Mahi fillets to the marinade and let them sit for at least 30 minutes.
Preheat the grill to medium-high heat. Remove the Mahi Mahi from the marinade and place it on the grill. Grill for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.
In a separate bowl, combine halved cherry tomatoes and fresh basil leaves. Drizzle with a little olive oil, season with salt and pepper to taste, and toss gently.
Once the Mahi Mahi is grilled, place it on a serving plate, top with the tomato and basil mixture, and drizzle with additional lemon juice if desired. Serve with your choice of two sides.
