Broth Preparation

    Make the Broth

    In a large pot, add pork bones and water. Bring to a boil, then reduce heat and simmer for 6-8 hours. Skim off any scum that rises to the surface.

    Season the Broth

    After simmering, strain the broth and return it to the pot. Add soy sauce, mirin, and dashi powder. Simmer for an additional 30 minutes.

    Cook the Ramen

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Prepare the Tomato Base

    In a pan, heat sesame oil over medium heat. Add garlic, ginger, and chili paste. Sauté for 2-3 minutes until fragrant. Add diced tomatoes and cook for another 5 minutes until soft.

    Combine Everything

    Add the tomato mixture to the broth and stir well. Incorporate the cooked ramen noodles into the broth.

Serving

    Plate the Ramen

    Serve the ramen in bowls, topped with soft-boiled eggs, nori sheets, chopped spring onions, chili flakes, and fresh cilantro.
