Broth Preparation
1. Prepare the Pork Bones
In a large pot, add the pork bones and cover with cold water. Bring to a boil and let boil for 10 minutes to remove impurities. Drain and rinse the bones.
2. Make the Broth
Return the cleaned bones to the pot. Add 6 quarts of fresh water, garlic, ginger, onion, and scallions. Bring to a boil, then reduce to a simmer. Simmer for 12-16 hours, skimming off any foam that rises to the surface.
3. Season the Broth
After simmering, strain the broth through a fine mesh sieve. Return the liquid to the pot and add soy sauce, mirin, and salt to taste.

4. Cook the Noodles
In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.
5. Assemble the Ramen Bowl
In a large bowl, add a serving of noodles, ladle hot tonkotsu broth over the noodles, and top with chashu pork, nori sheets, bamboo shoots, soft-boiled eggs, and fresh cilantro.
