Preparation
1. Prepare the Broth
In a large pot, add the pork belly and cover with water. Bring to a boil, then reduce heat and let simmer for 2 hours, skimming off any impurities that rise to the surface.
2. Season the Broth
Add soy sauce, mirin, sake, ginger, garlic, and green onions to the pot. Let it simmer for an additional 1 hour.
3. Cook the Noodles
In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
4. Prepare Chashu Pork
Remove the pork belly from the broth and let cool slightly. Slice into 6 pieces and return to the broth to soak for an additional 30 minutes.
