Prepare the Broth
In a large pot, combine the pork bones and water. Bring to a boil, then reduce to a simmer. Cook for at least 4 hours, skimming off any scum that rises to the surface.
Season the Broth
After 4 hours, add soy sauce, mirin, miso paste, and Japanese curry powder. Stir well and let simmer for another 30 minutes. Taste and adjust with salt and pepper.
Cook the Ramen Noodles
In a separate pot, bring water to a boil. Cook the ramen noodles according to package instructions. Drain and set aside.
Assemble the Ramen Bowl
In serving bowls, place the cooked ramen noodles. Ladle the hot curry tonkotsu broth over the noodles. Top with soft-boiled eggs, sliced green onions, nori, and a drizzle of sesame oil.
Serve
Serve hot and enjoy your creamy curry ramen!
