Chashu Pork

Prepare the Pork
Roll the pork belly tightly and tie it with kitchen twine. This will help it keep its shape while cooking.

Cook the Pork
In a pot, combine soy sauce, mirin, sake, sugar, garlic, ginger, and green onions. Add the rolled pork belly to the pot and cover with water. Bring to a boil, then reduce heat to low and simmer for about 2-3 hours until tender.

Slice the Pork
Once cooked, remove the pork from the pot and let it cool slightly. Slice the pork into thin pieces.

Cook the Rice
Rinse the short grain rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the rice cooker's instructions.
Assembly

Assemble the Donburi
In a bowl, serve a portion of rice, top with sliced chashu pork and a generous amount of takana. Enjoy!
