Burger Preparation

Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy. Remove and set aside.

In a bowl, season the ground beef with salt and pepper. Divide into 4 equal portions and form into patties.

Cook the Patties
In the same skillet used for the bacon, cook the patties for about 4-5 minutes on each side, or until desired doneness. Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.

Toast the burger buns lightly. Spread chipotle mayonnaise on the bottom bun, then layer with lettuce, tomato (sliced), pickles, the beef patty with melted cheese, and bacon. Top with the other half of the bun.

Peel and cut the potatoes into thin strips. Rinse under cold water and pat dry with a clean towel.
