    Infuse the Cream

    In a medium saucepan, combine heavy cream and split vanilla bean (scrape the seeds into the cream). Heat over medium until just boiling. Remove from heat and let steep for 15 minutes.

    Whisk Egg Yolks and Sugar

    In a bowl, whisk together egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

    Combine Mixtures

    Strain the infused cream through a fine-mesh sieve into the egg yolk mixture, whisking constantly until fully combined.

    Bake the Custard

    Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the centers remain slightly jiggly.

    Chill

    Remove ramekins from the water bath and cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

    Caramelize the Sugar

    Before serving, sprinkle a thin layer of granulated sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crisp, golden crust. Alternatively, broil in the oven for 1-2 minutes, watching closely to prevent burning.
