    Roast the Mushrooms

    Preheat the oven to 200°C (400°F). Clean the mushrooms and place them on a baking tray. Drizzle with olive oil, sprinkle with salt and black pepper. Roast in the oven for 20-25 minutes until golden brown.

    Caramelize the Onions

    While the mushrooms are roasting, slice the onions thinly. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the onions and a pinch of salt, cooking slowly for about 15-20 minutes until caramelized and golden.

    Prepare Goat Cheese Cream

    In a small saucepan, combine goat cheese and heavy cream. Heat over low heat, stirring until smooth and creamy. Remove from heat and set aside.

    Fry the Rosemary

    In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the fresh rosemary sprig and fry for 1-2 minutes until crispy. Remove and drain on paper towels.

    Assemble the Dish

    On a serving plate, layer the roasted mushrooms and caramelized onions. Drizzle the goat cheese cream over the top and garnish with the fried rosemary.
