Filet Mignon with Garlic Confit and Port Demi

    Prepare Garlic Confit

    In a small saucepan, combine the garlic cloves and olive oil. Simmer over low heat for about 30 minutes, until the garlic is soft and fragrant. Remove from heat and let cool.

    Make Port Demi

    In a separate saucepan, combine the port wine and beef stock. Bring to a boil, then reduce the heat and let it simmer until reduced to a thick sauce, about 15-20 minutes. Stir in the fresh thyme and season with salt and pepper.

    Cook Filet Mignon

    Season the filet mignon with salt and black pepper. In a skillet, melt the butter over medium-high heat. Add the filet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

    Plate the Dish

    Place the filet mignon on a plate, top with garlic confit, and drizzle the port demi over the top. Serve hot.
