Roasting the Vegetables
Preheat the oven to 400°F (200°C). Chop the red bell pepper, zucchini, and red onion into bite-sized pieces. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes, until they are tender and slightly caramelized.

Preparing the Spinach and Tomatoes
While the vegetables are roasting, rinse the spinach and cherry tomatoes. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté until just wilted, about 2-3 minutes. Add the cherry tomatoes and cook for an additional 2 minutes until they start to burst.
