    Roasting the Vegetables

    Preheat the oven to 400°F (200°C). Chop the red bell pepper, zucchini, and red onion into bite-sized pieces. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes, until they are tender and slightly caramelized.

    Preparing the Spinach and Tomatoes

    While the vegetables are roasting, rinse the spinach and cherry tomatoes. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté until just wilted, about 2-3 minutes. Add the cherry tomatoes and cook for an additional 2 minutes until they start to burst.

    Combining the Ingredients

    Once the roasted vegetables are done, remove them from the oven and add them to the skillet with the spinach and tomatoes. Gently toss everything together to combine. Adjust seasoning with salt and pepper to taste.
