Directions for Vegan Pad Thai

    Prepare the noodles

    Soak the rice noodles in hot water for about 20-30 minutes or until soft. Drain and set aside.

    Cook the tofu

    In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Cut the tofu into cubes and add to the skillet. Cook until golden brown on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.

    Sauté vegetables

    In the same skillet, add the remaining tablespoon of oil, garlic, green onions, red bell pepper, and carrot. Sauté for about 3-4 minutes until the vegetables are tender.

    Combine ingredients

    Add the soaked noodles, cooked tofu, bean sprouts, soy sauce, peanut butter, lime juice, and Sriracha sauce to the skillet. Toss everything together and cook for another 2-3 minutes until heated through.

    Remove from heat, garnish with chopped peanuts and fresh cilantro. Serve hot with lime wedges on the side.
