Prepare the Shrimp Summer Rolls
Cook the Shrimp
In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and let cool.
Prepare the Noodles
Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water.
Assemble the Rolls
Fill a shallow dish with warm water. Soak a rice paper wrapper for about 10-15 seconds until soft. Lay it on a clean surface. In the center, layer a few mint and cilantro leaves, some lettuce, a small amount of rice noodles, shrimp, cucumber, and carrot. Fold the sides over and roll tightly from the bottom up. Repeat for remaining wrappers.

Mix the Ingredients
In a bowl, combine the peanut butter, soy sauce, lime juice, honey, minced garlic, and water. Mix well until smooth. Adjust consistency with more water if needed and add chili flakes to taste.
