Prepare the Broth

In a large pot, combine the chicken, water, onion, ginger, star anise, cloves, and cinnamon stick. Bring to a boil over high heat.

Simmer the Broth

Once boiling, reduce the heat to low and simmer for about 1 hour, skimming off any foam or impurities that rise to the surface.

After an hour, add fish sauce and salt to the broth. Continue to simmer for another 30 minutes.

While the broth is simmering, cook the rice noodles according to package instructions. Drain and set aside.
