Making the Pho Broth

    Prepare the Bones

    Rinse the beef bones under cold water and place them in a large pot. Cover with water and bring to a boil. Boil for 10 minutes, then drain and rinse the bones and pot.

    Make the Broth

    Return the bones to the pot, add 4 liters of fresh water, and bring to a boil. Add the onion (halved), ginger (sliced), star anise, cinnamon stick, and cloves. Reduce heat to low and simmer for at least 3 hours, skimming any foam that rises to the surface.

    Season the Broth

    After 3 hours, add the fish sauce and salt to taste. Continue to simmer for another 30 minutes.

    Strain the Broth

    Remove the bones and spices from the broth using a fine mesh strainer. Keep the broth warm on low heat while preparing the noodles and toppings.
