Soak the rice noodles in warm water for about 20-30 minutes until they are soft. Drain and set aside.

Cook the Seafood

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and scallops, cooking until shrimp is pink and scallops are opaque, about 3-4 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of oil and garlic. Sauté for about 30 seconds, then push the garlic to the side and crack the eggs into the skillet. Scramble them until just set.
