Prepare the Tofu
Press the tofu to remove excess moisture, then cut into cubes.
Cook the Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Fry the Tofu
In a large skillet, heat the vegetable oil over medium-high heat. Add the cubed tofu and fry until golden and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and drain on paper towels.
Make the Tomato Sauce
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the tomato sauce, soy sauce, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
Combine Tofu and Sauce
Add the fried tofu back into the skillet with the tomato sauce and stir to coat. Cook for an additional 2-3 minutes until heated through.
Serve
Fluff the jasmine rice with a fork and serve topped with the tofu and tomato sauce mixture. Garnish with chopped green onions and fresh herbs.
