Method
Preparing the Summer Rolls
Cook the Noodles
Boil the rice vermicelli noodles according to package instructions. Drain and rinse under cold water. Set aside.
Prepare the Vegetables
Julienne the cucumber, carrots, and red bell pepper. Slice the avocado.
Soften the Rice Paper
Fill a large bowl with warm water. Dip a rice paper wrapper into the water for about 10-15 seconds until soft. Remove and let excess water drip off.
Assemble the Rolls
On the softened rice paper, layer a few lettuce leaves, a small amount of the noodles, julienned vegetables, avocado slices, mint, and cilantro. Roll tightly, folding the sides in as you go.
Repeat
Repeat the process with the remaining wrappers and filling ingredients.
Making the Peanut Sauce
Combine Ingredients
In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and water until smooth. Adjust consistency with more water if needed.
