Method
Spring Roll Preparation
Prepare the Filling
In a large mixing bowl, combine the shredded cabbage, grated carrot, bean sprouts, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.
Wrap the Spring Rolls
Take one spring roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the filling onto the lower third of the wrapper. Fold the sides over the filling and roll it tightly from the bottom to the top. Seal the edge with a little water. Repeat with remaining wrappers and filling.
Fry the Spring Rolls
Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add the spring rolls in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
Dipping Sauce Preparation
Make the Dipping Sauce
In a small bowl, whisk together the fish sauce, lime juice, sugar, and chili flakes until the sugar dissolves. Taste and adjust seasoning as desired.
