Prepare the Broth

In a large pot, add the beef bones (or pork/chicken bones) and water. Bring to a boil, then reduce to a simmer. Skim off any foam that rises to the top.

Add Aromatics

Add the onion (halved), ginger (sliced), star anise, cinnamon stick, cloves, fish sauce, and sugar to the pot. Simmer for at least 1.5 to 2 hours, adding water as necessary to keep the bones covered.

Cook the Noodles

In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

Strain the Broth

After simmering, strain the broth through a fine-mesh sieve into another pot. Discard the solids.

Assemble the Pho

In bowls, add a portion of cooked noodles, then ladle the hot broth over the noodles. Top with fresh herbs, lime wedges, bean sprouts, sliced jalapeños, and tofu if using.

Serve the pho hot, allowing everyone to customize their bowls with additional toppings as desired.
