Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes until soft. Drain and set aside.
Cook the Protein
In a large skillet or wok, heat 1 tablespoon of peanut oil over medium-high heat. Add the duck breast or seafood and cook until fully cooked through, about 5-7 minutes. Remove and set aside.
Scramble the Eggs
In the same skillet, add another tablespoon of peanut oil. Crack the eggs into the skillet and scramble until fully cooked. Remove and set aside.
Combine All Ingredients
Add the soaked noodles to the skillet along with the cooked protein, scrambled eggs, bean sprouts, and green onions. Pour in the fish sauce, tamarind paste, sugar, and chili powder, and toss everything together until well combined and heated through.
Serve
Garnish with crushed peanuts and serve with lime wedges on the side.
