Prepare the Noodles
Soak the rice noodles in hot water for about 20-30 minutes, until softened. Drain and set aside.
Cook the Protein
In a large pan or wok, heat 1 tablespoon of peanut oil over medium-high heat. Add your chosen protein and cook until browned and cooked through. Remove from the pan and set aside.
Sauté Aromatics
In the same pan, add another tablespoon of peanut oil and sauté the minced garlic until fragrant, about 30 seconds.
Combine Ingredients
Add the soaked noodles, cooked protein, bean sprouts, and green onions to the pan. Pour in the soy sauce, fish sauce, tamarind paste, and remaining tablespoon of peanut oil. Toss everything together until well combined and heated through.
Serve
Serve hot, garnished with crushed peanuts, lime wedges, and red chili flakes to taste.
