Prepare the Noodles

Bring a pot of water to boil and cook the chow mein noodles according to package instructions. Drain and set aside.

Cook the Protein

In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the duck breast (or your choice of protein) and sear until cooked through and golden brown. Remove from the pan and let it rest, then slice thinly.

Stir-Fry the Vegetables

In the same wok, add the remaining vegetable oil. Add garlic, ginger, and stir-fry for about 30 seconds until fragrant. Then add the carrot and bell pepper. Stir-fry for 2-3 minutes until tender.

Add the cooked chow mein noodles, sliced protein, bean sprouts, soy sauce, oyster sauce, and sesame oil to the wok. Toss everything together over medium heat for 2-3 minutes until heated through.

Season with salt and pepper to taste. Garnish with chopped spring onions and serve hot.
