Pasta Preparation

    Cook the Cavatappi

    In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes. Drain the pasta and set aside.

    Blanch the Broccoli

    In the same pot of boiling water, add the broccoli florets and cook for about 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside with the pasta.

Alfredo Sauce Preparation

    Make the Sauce

    In a large skillet over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant and slightly golden.

    Add Cream and Cheese

    Slowly pour in the heavy cream while stirring continuously. Allow it to simmer for about 3-5 minutes. Gradually add the grated Parmesan cheese while stirring to ensure it melts smoothly into the sauce.

    Season the Sauce

    Season the sauce with salt, black pepper, and nutmeg (if using). Stir well to combine all flavors.

    Mix Pasta and Sauce

    Add the drained cavatappi and broccoli into the Alfredo sauce. Toss gently to coat the pasta and broccoli evenly with the sauce. Cook for an additional 2-3 minutes to heat through.

    Remove from heat and serve immediately, garnished with chopped parsley and extra Parmesan cheese, if desired.
