    Prepare the Vegetables

    Chop the onion, garlic, red and green bell peppers, jalapeño pepper, carrot, and celery into small pieces.

    Cook the Meats

    In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and chorizo sausage. Cook until browned, about 5-7 minutes, breaking up the meat with a spoon.

    Drain the Beans

    Open the cans of kidney beans, black beans, and pinto beans. Drain and rinse under cold water.

Cooking

    Sauté Vegetables

    In the same skillet with the cooked meat, add the chopped onion, garlic, bell peppers, jalapeño, carrot, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.

    Add Tomatoes and Spices

    Stir in the canned diced tomatoes, tomato paste, and all the spices (chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne). Mix well.

    Combine Ingredients

    Add the drained beans and beef broth to the skillet. Stir to combine all ingredients.

    Simmer

    Reduce heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally. This allows the flavors to meld together.
