Prepare the Chicken

In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper to create a marinade. Add the chicken breasts and coat them evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Bread

While the chicken is marinating, slice the ciabatta rolls in half and toast them lightly on a grill or in a toaster until golden brown.

Cook the Chicken

Heat a grill or skillet over medium heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for a couple of minutes before slicing.

Assembly

Assemble the Sandwich

On the bottom half of each ciabatta roll, add a generous layer of honey mustard sauce. Place a handful of lettuce leaves, followed by a slice of tomato, then add the sliced grilled chicken. Top with shredded cheddar cheese and close the sandwich with the top half of the ciabatta roll.

Serve

Cut the sandwiches in half and serve immediately with additional honey mustard sauce on the side if desired.
