Add Garlic and Broth
Stir in the minced garlic and cook for an additional 2 minutes until fragrant. Pour in the beef broth and add thyme, bay leaf, salt, black pepper, and white wine (if using). Bring the mixture to a boil, then reduce the heat to low.

Let the soup simmer for about 30-40 minutes, allowing the flavors to meld together. Taste and adjust seasoning as needed.

Prepare the Bread
While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the slices of baguette on a baking sheet and toast in the oven for about 10 minutes, or until golden brown.

Sprinkle the provolone and Swiss cheese generously over the bread. Place the bowls on a baking sheet and broil in the oven for about 3-5 minutes, or until the cheese is melted and bubbly.
