Marinating the Chicken

    Prepare the Marinade

    In a large bowl, combine the yogurt, lemon juice, minced garlic, minced ginger, cumin powder, paprika, turmeric powder, salt, black pepper, and olive oil. Mix well until smooth.

    Marinate the Chicken

    Add the chicken thighs to the marinade. Mix until the chicken is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

Grilling the Chicken and Vegetables

    Preheat the Grill

    Preheat your grill to medium-high heat (about 200-220°C or 400-425°F).

    Prepare the Vegetables

    While the grill is heating, chop the bell peppers, zucchini, and red onion into bite-sized pieces. Toss them in a little olive oil, salt, and pepper.

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 75°C (165°F).

    During the last 5 minutes of cooking the chicken, add the vegetables to the grill. Grill them until tender and slightly charred, about 5-7 minutes.

    Once everything is cooked, remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes. Serve the chicken with the grilled vegetables, garnished with chopped parsley and lemon wedges on the side.
