    Prepare the Onion

    Peel the onion and cut off the top, leaving the root intact. Carefully slice the onion into 12-16 wedges, cutting from the top to the root but not through the root. Soak the onion in cold water for 1-2 hours to help it bloom.

Batter Mixture

    Make the Batter

    In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Gradually add cold water while whisking until the batter is smooth and thick.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 375°F (190°C). Ensure there is enough oil to fully submerge the onion.

    Batter and Fry the Onion

    Remove the onion from the water and shake off excess water. Dip the onion into the batter, ensuring it is fully coated. Carefully lower the battered onion into the hot oil and fry for about 3-5 minutes, or until golden brown. Remove from oil and drain on paper towels.

    Prepare the Dipping Sauce

    In a small bowl, mix together mayonnaise, ketchup, horseradish sauce, lemon juice, and paprika until well combined. Serve alongside the bloomin' onion.
