Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, mix together the buttermilk, hot sauce, salt, and black pepper until well combined.

  2. 2

    Marinate the Chicken

Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Breading Process

  1. 3

    Prepare the Breading Mixture

In a separate bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until evenly mixed.

  2. 4

    Bread the Chicken

Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Shake off any excess flour.

Frying the Chicken

  1. 5

    Heat the Oil

In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Chicken

Carefully place the breaded chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry for 12-15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C).

  3. 7

    Drain and Serve

Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Let cool slightly before serving.
