Prepare the Fries

Bake the Fries
Preheat your oven to the temperature specified on the frozen french fries package. Spread the frozen fries in a single layer on a baking sheet and bake according to package instructions until golden brown and crispy, usually about 25-30 minutes.

Fry the Fries (optional)
If you prefer a deep-fried version, heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in batches and fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
Make the Cheese Sauce

Melt Butter
In a medium saucepan over medium heat, melt the unsalted butter, stirring occasionally.

Add Milk
Slowly pour in the whole milk while continuing to whisk, ensuring no lumps form. Continue to cook for about 5 minutes, or until the sauce thickens.

Add Cheeses
Reduce the heat to low, add the shredded cheddar cheese and cream cheese, stirring until completely melted and smooth. Season with salt and black pepper to taste.
Assemble the Dish

Combine Fries and Cheese
Once the fries are ready, place them on a serving platter or individual plates. Pour the warm cheese sauce generously over the fries.

Sprinkle the cooked bacon bits, sliced green onions, and jalapeños over the cheese-covered fries.
