Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Sauce
In a saucepan over medium heat, melt the butter. Add the heavy cream and bring to a gentle simmer. Gradually whisk in the cheddar cheese until melted and smooth. Stir in the truffle oil, fines herbes, salt, and black pepper.

Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and mix until well combined.

Prepare the Panko Topping
In a small bowl, combine the panko breadcrumbs with a drizzle of truffle oil and a pinch of salt. Mix well.

Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a baking dish, sprinkle the panko topping evenly over the top, and bake for 20-25 minutes, or until golden and bubbly.
