    Prepare the Chicken

    In a large bowl, rub the jerk seasoning all over the chicken thighs. Allow marinating for at least 1 hour or overnight in the refrigerator for best flavor.

    Soak the Pimento Wood Chips

    Soak the pimento wood chips in water for at least 30 minutes before grilling to prevent them from burning too quickly.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using charcoal, arrange the coals on one side of the grill.

    Grill the Chicken

    Remove the chicken from the marinade and brush with olive oil. Season with salt and black pepper. Place the chicken on the grill, skin side down, over direct heat. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Add the Pimento Wood Chips

    In the last 10 minutes of cooking, place the soaked pimento wood chips directly on the coals or in a smoker box to infuse the chicken with flavor.

    While the chicken is grilling, chop the green onions and wash the cherry tomatoes.

    Once the chicken is done, let it rest for a few minutes before serving. Garnish with green onions and cherry tomatoes.
