Preparation Steps
Prepare the Bone Marrow
Preheat your oven to 450°F (232°C). Place the beef bone marrow pieces upright on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
Roast the Bone Marrow
Roast in the preheated oven for about 15-20 minutes, or until the marrow is soft and begins to bubble.
Cook the Duck Breast
While the marrow is roasting, score the skin of the duck breast and season with salt and pepper. In a skillet over medium heat, place the duck breast skin-side down. Cook for about 6-8 minutes until the skin is crispy, then flip and cook for another 3-4 minutes. Let rest before slicing.
Prepare the Watermelon
Cube the watermelon into bite-sized pieces and set aside.
Make the Herb Garnish
Chop the fresh herbs and mix them together in a bowl.
Plate the Dish
On a serving plate, arrange the roasted bone marrow alongside slices of duck breast. Add the cubed watermelon and sprinkle the fresh herbs over the top.
